Well it was finally Coconut Shrimp time. They turned out great and would be a great party appetizer. A few techniques I use when preparing a lot of little things are: get an assembly line going in the order of completion. So I start with the shrimp in a baggie, usually the qt. size will do. Pour some milk in with the shrimp, close the baggie and shake, set aside. Get another baggie and put some flour in it. Next have a bowl with a couple eggs beaten, then the last item in the assembly line is a plate with probably a cup of Panko and a cup of shaved sweet Coconut mixed together. Your pan with cooking or Coconut oil should be ready to start frying medium heat is good. Start the line, put a few milky shrimp in the flour bag and shake, then take them and dunk them in the eggs and last press them into the Panko/Coconut mixture and cook them to a golden brown and remove to paper towels. Continue until all items have been run through the assembly line. Take a cup of orange marmalade and squirt some Thai Sriracha Chili Sauce to your taste, another cup of marmalade with some dark rum and your ready to go.
